Sourcing

Chef Matt has visited ranches and producers throughout the West to find those passionate independent producers growing ingredients with care, many of whom are exclusively offered here in Southern Nevada

Dry-Aging

The process of dry aging is well established as a practice for bringing out the best taste and texture in beef. Chef Matt is among the vanguard of chefs now using this same method for poultry, fish and other proteins. It takes more time and trouble than many would bother with, but we feel the results speak for themselves.
